'''Lactobacillus''' (often referred to as ''Lacto'') is a genus of lactic acid bacteria (LAB) which produces acidity and sour flavors in the form of lactic acid (and sometimes acetic acid) found in lambics, Berliner Weiss, sour brown ales, and gueuze.
