# A twenty to twenty-four month fermentation dominated by ''Brettanomyces'', ''Lactobacilli'', ''Pediococcus'', and acetic acid bacteria (''Acetobacter'').
The development of the third stage with ''Brettanomyces'' and ''Pediococcus'' was similar to the development of these microbes in [[Lambic]] fermentation.
