About 90% of sugar metabolized by ''Pediococcus'' produces lactic acid. Some strains of ''P. damnosus'' can ferment maltose and sucrose <ref name="ucdavis"></ref>. The disaccharide trehalose is the preferred carbon source for Pediococci <ref name="Geissler"></ref>.
