Off flavors are flavors that are either considered to be undesirable by a majority of sour beer brewers, or by at least a significant number of sour beer brewers. Note that there is not always agreement on what is an off flavor, nor at what threshold a given flavor component is to be considered an off flavor. Example: ethyl acetate in "low levels" has a fruity, pineapple flavor. In higher amounts, ethyl acetate has the aroma of nail polish that is generally not desirable.
